This wild boar was a lot of fun to cook. We placed him in the oven at 275 roasted him low and slow. It was served with an apricot chutney.

This was a fun assignment roasted off the sturgeon and platted it with capers, red onion, Japanese cucumbers and marinated Julian tomatoes.

Ice Sculpture

This ice sculpture was made with the fish in the ice and was on display for the 400 guests that attended the big game night.  

Big Game Night at Portland University Club 

If you wanted to have some exotic taste food then the annual big Game Night at Portland's University club is the place for you. I had a wonderful opportunity to participate in this elite annual event. You will see some very unique foods and the presentation of numerous dishes

Water Buffalo

This enormous slab of meat was fork tender juice and delicious. It was a lot of fun to carve the meat off the ribs and show case the thoracic cavity.

Game Birds

   All different varieties of game birds. Duck, Pheasant, Squab and quail all just hanging around.

No Grilled Cheese Sandwich for you !

On this blustery November Day I was walking downtown to one of the several food carts to get some good old comfort food. On my arrival I was extremely disappointed today to find out that , The Grilled Cheese Grill was closed today. Man What a bummer. With the weather changing the leaves falling and a short window of no rain right now I was extremely excited to grab one of Portland's famous hot and cheesy sandwiches. So, now I was determined to go and track down some of the local street art to cleans my soul.

Just got to love the elephants in the park.

Walking through the park seems to put your mind at ease with the beauty fall colors from the different variety of trees.

Excellent Chicken Bowl

 If you find yourself walking around SW 10th ave food cart pod I would highly recommend the Bento Box.  Teriyaki Chicken Bowl; You will receive a generous amount of grilled chicken breast fresh vegetables and large serving of rice for a very reasonable price. $6.50 This will not disappoint you at all.
